Open source with a WYSIWYG editor makes MoinMoin attractive. Unfortunately, MoinMoin is not an easy install on a shared LAMP server without shell access: http://moinmo.in/HelpOnInstalling/ApacheOnLinuxFtp
I couldn't get it to work, maybe I'm an idiot - if anyone else has luck installing it on a shared server I would like to hear about it.

Yeah, it is not easy to install without shell access, especially for the first install.
The only recommendation for this case is to first install it on some machine you have shell access to get used to it. Once you know what you have to do, you can prepare stuff locally and the ftp it to the target machine.
If you don't run linux and your target machine is linux based, you maybe want to try a local install of Ubuntu Linux, it's quite easy.
