I love this site. I have been using the choice wizard frequently. I have come up with several recommended wikis but I cannot seem to find one I am comfortable with.
What I need is a wiki that allows 1000’s of independent users to input data via the internet into a searchable database.
I found seedwiki to have a database function, but since it is free and geared more to the expert rather then the novice (like me). I do not see how to use it. Some of the wikis I found through this sites choice wizard have easy simple to use interfaces but I have not found any that show a database.

You may want to consider an online database service for your desired outcome.
Here are a couple I'd recommend:
DabbleDb: http://dabbledb.com
Zoho Creator: http://creator.zoho.com
Blist: http://www.blist.com - This is in beta right now but is very promising
These services will allow you to create a form that anyone can submit info into and then it can be embedded or accessible anywhere.

We have used EditMe's API to create sites like this in the past. We are about to launch just such a project for a client - a site that manages 15,000+ records with about 25 fields each. Instead of getting an editor when you edit one of these pages, you get a form that validates information and provides drop downs, etc. All the changes are saved as page versions tagged with the user name that made them. This was custom development - you'd either need to have programming skills to do it yourself using EditMe's API or use our professional services to do it for you.

I did research the three posted in the first reply. One is undetermined and the other two do not look like they can support this endeavor either.
Here are some more details for what I am looking for.
1. The basic concept is to create a database that lists businesses. It would be ideal if individual businesses could enter their own information. I prefer not to enter all the information myself, because if the labor it would take and because they are more likely to know their business better then I, so they would do a better job.
2. I would like the database to have all the standard features of a normal database- search, sort, filter, save and share.
3. Lastly, it would be nice if I could create pages of definitions that pertain to my specific industry – a small independent industry based wikipedia of sorts. This would be nice, but not required. Mostly I need the database functions.

Tikiwiki (http://tikiwiki.org) might meet your needs. In addition to the normal wiki page functions, it has a "trackers" feature. This lets you (admin or other with correct permission) create forms that can then be filled in and submitted by users. A tracker has its own page or you can use wiki plugins to display tracker data in wiki pages.

With Xwiki (http://www.xwiki.org), you can create forms with very little programming, using the tools built in to the wiki. You can You can also write small velocity/groovy code to query, sort etc the data entered via these forms.
