Hi, I am trying to securely communicate with an organization of people to update and share information back and forth. Is there a way to neatly create a chart/grid that can organize numerical information on a Wiki, in which everyone can plug in and update their information?

Depends on the Wiki. I'm pretty sure PmWiki has a plugin for that very tasking, and I'm sure most others do as well.
I'm pretty sure MediaWiki does NOT have such a plugin, however.
PS Here's something close, so I know it's possible, and should be easy to create such a plugin:

Gah! I'm an idiot. From the first reading of your post, I thought you were looking for a plugin to create dynamic org charts.
So, since they are plain-jane charts, pretty much every wiki has a plugin to do that.

I'd recommend taking a look at MindTouch. We have a couple of different charting options. Including support for AnyCharts which is coming out in our next release. The important aspect is that MindTouch allows you to integrate with external applications and systems so that you can expose that information through the charts.
