  MindTouch has a community version which is free to use but unfortunately the Outlook connector can only be used with the Enterprise Version.  What you can do though is download the community version and write a script to post emails to MindTouch Deki from a mailbox.  This would then create a wiki page for each email that comes in. If you were interested in that type of functionality, the email posting script, I'd recommend posting to our community and I'm sure there will be other people that will be able to help with the development of the code for the benefit of the community.
